Method
In saucepan, heat oil over medium heat. Add onion and garlic; cook, stirring occasionally, until onion has softened, about 5 minutes. Add remaining ingredients; bring to boil. Reduce heat; simmer until mixture reaches consistency of thick ketchup, about 10 minutes.
In food processor or blender, purée mixture until smooth. Spoon sauce into airtight container, leaving 1/2-inch headspace. (Make-ahead: Can be refrigerated for up to 2 weeks or frozen for up to 6 months.)
