Tilapia is a great (and sustainable) fish option, but you can substitute halibut, catfish, cod or any other firm white-fleshed fish. Serve with lime wedges.

Lime Chili Mayo: Stir together mayonnaise, cilantro, lime juice, jalape?o pepper and salt; set aside.In shallow dish, whisk egg with milk. In separate shallow dish, stir together crackers, garlic powder, coriander, salt and pepper.
One at a time, dip fillets into egg mixture, turning to coat and allowing excess to drip off. Place in cracker mixture, pressing to coat.
In skillet in batches, melt butter over medium heat; cook fish, turning once, until golden and fish flakes easily when tested with fork, about 12 minutes. Serve with mayo.
