In blender, purée together avocado, ice cubes, almond milk and honey until smooth. Pour into glasses; sprinkle with pistachios (if using).
Test Kitchen Tip: If the smoothie is too thick, add more almond milk until it's the desired consistency. For a subtly tropical flavour, add a teaspoon of coconut oil.
