In fine-mesh sieve, rinse buckwheat groats under cold water until water runs clear.
In saucepan, combine buckwheat groats, coconut beverage, honey, vanilla, salt, cardamom and ginger; bring to boil. Reduce heat to low; cover and simmer until buckwheat groats are tender, about 15 minutes. Remove from heat. Let stand for 5 minutes.
Divide porridge among bowls; drizzle with coconut milk.
Toppings: Sprinkle porridge with pomegranate seeds, orange segments and pistachios.
