Method
In small saucepan over medium heat, combine quinoa, milk, maple syrup, cocoa powder and vanilla. Cook, stirring often, until combined and some of the liquid has evaporated, about 5 minutes. Let cool slightly.
Transfer to glass jar. Add banana, almonds and chocolate chips, if using. Cover jar and refrigerate until ready to eat (or overnight).
