Add whisky, Cranberry Ginger Coulis, Vanilla Syrup and bitters to cocktail shaker. Add enough ice cubes to fill shaker halfway. Close shaker and shake for 8 to 10 seconds.
Place cocktail strainer over shaker and pour cocktail into martini glass or champagne coupe. Garnish with lemon zest.
Cranberry Ginger Coulis
In saucepan, combine 3 cups frozen cranberries, 1 cup water, 3/4 cup maple syrup and 2 tsp grated fresh ginger. Bring to boil. Reduce heat to medium and simmer for 15 minutes. Using blender or handheld blender, purée cranberry mixture, then strain through sieve to obtain a very smooth texture. Let cool completely. (Make-ahead: Can be stored in airtight container and refrigerated for up to 5 days.) Makes about 2 cups.
Vanilla Syrup
In small saucepan, combine 1 cup each granulated sugar and water, and 2 tbsp vanilla. Bring to boil, stirring until sugar has dissolved. Remove from heat and let cool completely. (Make-ahead: Can be stored in airtight container and refrigerated for up to 1 month.) Makes about 1 1/2 cups.
