Method
Add egg yolk, cream, rum, Vanilla Syrup and salt to cocktail shaker. Close shaker and shake for 10 to 15 seconds. Add enough ice cubes to fill shaker halfway. Close shaker and shake again for 8 to 10 seconds.
Fill rocks or lowball glass with ice cubes. Place cocktail strainer on shaker and pour cocktail into glass. Sprinkle with nutmeg.
Vanilla Syrup
In small saucepan, combine 1 cup each granulated sugar and water, and 2 tbsp vanilla. Bring to boil, stirring until sugar has dissolved. Remove from heat and let cool completely. (Make-ahead: Can be stored in airtight container and refrigerated for up to 1 month.) Makes about 1 1/2 cups.
