Method
Add pear purée, Four-Spice Syrup, lemon juice and basil to cocktail shaker. Add enough ice cubes to fill shaker halfway. Close shaker and shake for 8 to 10 seconds.
Fill Collins or highball glass with ice cubes. Place cocktail strainer over shaker and pour cocktail into glass. Pour in enough sparkling water to fill glass. Garnish with lemon slice, and basil leaves, if desired.
Four-Spice Syrup
In small saucepan, combine 1 cup each granulated sugar and water, 2 tsp grated fresh ginger, 7 cloves, 2 cinnamon sticks and 1 crushed star anise. Cook over low heat, stirring often, until sugar has dissolved. Remove from heat; let stand for 30 minutes. Pour mixture into glass jar and let stand for
48 hours. Strain before using. (Make-ahead: Can be refrigerated for up to 1 month.)
Makes about 1 1/2 cups.
