In large pitcher, combine tomato and clam cocktail, Chamoy sauce and tequila. Refrigerate until ready to serve. Add ice cubes.
Meanwhile, squeeze 2 of the lime wedges around rims of 6 Collins or highball glasses. Place Tajin seasoning on small plate; dip rim of each glass in seasoning. Set aside.
Thread each of 6 cocktail skewers with lime wedge, cheese cube and pepperoncino. Set aside.
Pour cocktail into prepared glasses and garnish each with celery stalk, pepperette and reserved cocktail skewer.
