Method
Place tea bags in large heatproof bowl; pour in boiling water and let steep for 5 minutes. Discard tea bags.
Meanwhile, in large saucepan, stir together peaches, cold water and brown sugar. Bring to boil. Reduce heat to medium-low; simmer, stirring occasionally, about 10 minutes. Remove from heat; add rooibos tea. Let cool at room temperature for 30 minutes; refrigerate for 2 hours until cold.
Strain through cheesecloth-lined sieve into pitcher. Gently press peaches (not enough to cloud tea); discard fruit. Serve over ice in tall glasses. Garnish with peach wedges and mint leaves, if using.
