Method
In cocktail shaker, using pestle, muddle kiwifruit. Add gin, vermouth, Cinnamon & Vanilla Syrup, lime juice and egg white. Close shaker and shake to emulsify egg. Add ice cubes, close shaker and shake for 5 to 8 seconds.
Place cocktail strainer over shaker, pour contents into martini glass. Garnish with kiwifruit slice and sprinkle with cinnamon.
Cinnamon & Vanilla Syrup In small saucepan, bring 1 cup each granulated sugar and water, 2 tsp vanilla and 1 cinnamon stick to boil, stirring until sugar is dissolved. Remove from heat; let stand 1 hour. Transfer to bottle or glass jar; let cool completely. Leave cinnamon stick in bottle for added flavour. (Make-ahead: Can be refrigerated for up to 1 month.) Makes about 1 1/2 cups.
