In bowl, using muddler or handle of wooden spoon, mash 4 cups of the raspberries with 1/4 cup of the Thyme Simple Syrup. Strain through fine-mesh sieve into large pitcher, pressing on solids with rubber spatula and scraping bottom of sieve to extract pulp; discard solids. Add ice cubes.
Mix together club soda, gin, lime juice and remaining 1 cup Thyme Simple Syrup; pour into pitcher. Stir. Pour into glasses; garnish with thyme and remaining 1 cup raspberries.
