Method

In glass measuring cup, stir sparkling water, syrup and lemon juice with cocktail spoon; pour into chilled martini glasses. Thread small cocktail skewers with pieces of crystallized ginger and fresh blueberries.

MAKES 2 TO 3 SERVINGS

 

Blueberry & Ginger Syrup In saucepan, combine 1 cup water, 1 cup granulated sugar, 1 cup fresh or frozen blueberries and 1 tbsp grated fresh ginger. Bring to boil, stirring until sugar has dissolved. Reduce heat to medium; mash blueberries with fork and simmer for 5 to 7 minutes. Remove from heat; let cool for 30 minutes. Strain syrup through sieve placed over bowl. Refrig­erate for at least 2 hours before serving. (Make-ahead: Can be covered and refrigerated for up to 1 week.) Makes about 6 tbsp.

 

 

Change It Up

For an alcoholic version of this drink, add 1 to 2 oz of vodka per serving.
