Classic beef tacos are a real crowdpleaser and a family favourite. To feed more people, simply double or triple the recipe.

In nonstick skillet, heat oil over medium heat; cook onion, stirring occasionally, until softened, 4 to 5 minutes. Add garlic; cook for 1 minute.Add beef; cook, breaking up with back of spoon, until no pink remains, about 5 minutes. Stir in tomato paste, chili powder and half each of the salt and pepper. Remove from heat and keep warm.
Meanwhile, in bowl, combine avocado, corn, tomatoes, green onion, lime zest, lime juice and remaining salt and pepper. Set aside.
Heat tortillas according to package directions. Divide beef mixture among tortillas; top each with corn salsa, sour cream and Cheddar cheese.
