In bowl, combine rhubarb and granulated sugar. Reserve at room temperature.
In large bowl, using whisk, beat eggs and maple sugar until sugar is dissolved. Gradually add milk, alternating with flour, in 2 additions. Add butter and vanilla, and mix until batter is smooth.
Preheat barbecue to high heat (about 400°F), lighting only one or two burners (in preparation for cooking over indirect heat). Butter 10-inch cast-iron skillet. Spread rhubarb in prepared skillet and pour in batter. Place skillet on grill over unlit burners; close lid. Cook, turning skillet a quarter turn every 10 minutes during cooking time, until clafoutis is set and golden, 30 to 40 minutes. Let stand 5 minutes before serving. Sprinkle with pistachios; serve with ice cream, if using.
