Apple strudel, or Apfelstrudel, hails from Austria. Traditionally, strudel is made with a very delicate homemade dough that's stretched by hand. Our fabulous phyllo pastry version retains the authentic flavours, and is much easier to make.

Method

Filling Preheat oven to 375°F. In bowl, stir apples, lemon juice, sugar, cinnamon, salt, raisins and breadcrumbs until combined; set aside.

Strudel Unwrap phyllo pastry and cover it immediately with clean, slightly damp cloth. Lay large sheet of parchment paper on work surface.

In microwaveable measuring cup, melt butter, 15 to 25 seconds; set aside. Place sugar in small bowl; set aside.

Arrange 1 sheet of phyllo pastry on parchment paper, with long edge closest to you; lightly brush with melted butter and sprinkle with a little sugar. Top with another sheet of phyllo. Repeat until you have 8 layers. (Melt a little more butter, if necessary.)

Spoon reserved apple filling along one long edge, leaving 2-inch border along other sides; fold in short edges. Starting at filling edge, roll up. Place seam side down. Brush top with butter and, using small knife, make six cuts in top. Gently lift parchment paper and transfer to baking sheet.

Bake on upper rack of oven until pastry is golden brown and crispy, about 40 minutes. Let cool for 25 minutes. Sprinkle with icing sugar, if using. Using serrated knife, carefully cut into slices. (Make-ahead: Can be stored in airtight container and refrigerated for up to 4 days or frozen for up to 3 months.)
