Preheat oven to 400°F. In 10-inch ovenproof skillet, melt butter over medium-high heat. Whisk in sugar; cook, whisking often, until mixture is amber in colour. Stir in lemon juice. Cook until caramel has thickened, 3 to 4 minutes.

Reduce heat to medium-low; arrange pear slices, cut sides up, in desired pattern in caramel. Sprinkle with cinnamon. Cook, without stir­ring, until pears are caramelized, 10 to 12 minutes. Remove from heat and let cool.

Meanwhile, on floured work surface, roll out puff pastry into 12-inch disc. Using fork, prick pastry all over; place directly on top of pears. Fold pastry under at edge. Bake until pas­try is golden brown, 30 to 40 min­utes. Let cool for 20 minutes.

Invert serving plate onto skillet. Working quickly and carefully, turn skillet over onto plate and gently remove skillet. Sprinkle tarte with almonds and drizzle with caramel sauce, if using.
