Orange and Honey Glaze:
Method
In large bowl, whisk together eggs, butter, orange zest, orange blossom water and vanilla. In separate bowl, whisk together flour, sugar, ground almonds and salt; whisk into egg mixture just until combined.
Spoon heaping 1 tbsp into each mould of 2 greased 12-count madeleine pans. Bake in 350°F (180°C) oven until edges are golden, 12 to 15 minutes. Loosen from pan with tip of knife; invert onto racks. Let cool completely. Orange and Honey Glaze: In small bowl, whisk together icing sugar, honey and orange juice; brush over madeleines. Let stand until dry.
