Method

Crust Preheat oven to 350°F. Grease 8-inch square cake pan with butter and line with parchment paper, leaving overhang on two sides.

In bowl, using fork or your fingers, mix together flour, almonds, butter, sugar and salt until butter is completely incorporated. Transfer to prepared cake pan, pressing firmly into bottom. Bake until edges are golden brown, about 20 minutes. Set aside.

Apple Filling In microwaveable bowl, heat apple cubes, maple syrup and cinnamon on high, stirring halfway through cooking time, until apples are very tender, 8 to 10 minutes. Let cool slightly; transfer to bowl of food processor. Add butter; purée. Add egg and cornstarch; pulse until smooth. Scrape mixture over crust.

Sweet Apple Topping In bowl, toss diced apples with maple syrup, maple sugar and cornstarch. Pour over Apple Filling in pan, pressing lightly to slightly submerge the apples in filling. Bake for about 50 minutes. Let cool completely, at least 1 hour, before unmolding and cutting into 9 squares. (Make-ahead: Can be stored in airtight container and refrigerated for up to 4 days or frozen for up to 3 months.)
