Method
Preheat oven to 350°F. Mist 13- x 9-inch cake pan with cooking spray; line with parchment paper.
In saucepan, combine butter, milk chocolate and semisweet chocolate over medium-low heat, stirring, until melted and smooth, about 5 minutes; let cool for 10 minutes. Stir in sugar, vanilla and salt; stir in eggs, 1 at a time. Stir in flour. Scrape into prepared pan, smoothing top.
Bake until cake tester inserted in centre comes out clean with a few moist crumbs clinging, 25 to 28 minutes. Let cool completely in pan. (Make-ahead: Cover with plastic wrap and refrigerate for up to 3 days or overwrap with foil and freeze for up to 1 month. Thaw in refrigerator before proceeding.)
Lift out onto cutting board; trim edges as needed. Cut lengthwise into 3 rows; cut each row, wiping knife clean between each cut, into triangles with 1-inch base (about 12 triangles per row). Skewer base of each tree with pretzel stick for trunk.
Icing: In bowl, using hand mixer on medium speed, beat butter until smooth. Reduce speed to low; beat in icing sugar and milk until smooth and thick. Tint with food colouring (if using). Spoon icing into piping bag fitted with small plain tip; pipe lines onto each brownie. Decorate with sprinkles as desired.
Test Kitchen Tip: Personalize these fudgy trees by tinting the icing any colour you wish and using any sprinkles or decorations your heart desires.
