Method
Preheat oven to 400°F. Line baking sheet with parchment paper; set aside.
Peel pears and halve lengthwise. Using melon baller, remove core. Spread inside of each pear half with about 1 tsp butter. Place pears on prepared baking sheet, cut side up; sprinkle evenly with cardamom and cinnamon and drizzle with honey.
Bake, turning halfway through baking time, for 20 minutes. Drizzle with orange juice and let cool for 5 minutes.
Meanwhile, in bowl, whisk crème fraîche with fresh ginger, candied ginger and orange zest. Serve pears with crème fraîche mixture and garnish with mint, if using.
