Method
In food processor, pulse cookies until in coarse crumbs. Add pecans; pulse until in finecrumbs. Transfer to bowl; whisk in cocoa powder.
Whisk bourbon with corn syrup; drizzle over crumb mixture, stirring until mixture clumps together.
With slightly moist hands, roll by 2 tsp into balls; roll each ball in chocolate sprinkles to coat. Place on waxed paper–lined baking sheet or in candy cups; refrigerate until firm, 15 to 20 minutes. (Make-ahead: Layer between waxed paper in airtight container and refrigerate for up to 1 week.)
