These apple delights, part pie, part cake and part square, are called almás pite in their native Hungary. We don't typically grate apples when baking, but the unique method helps give these sweet sensations their unusual texture!

Filling Grease 8-inch square cake pan. In bowl, toss apples with sugar, cinnamon and lemon juice; set aside for 10 minutes.
Dough Preheat oven to 350°F. In bowl, whisk together flour, salt and baking powder. Using your fingers, rub in butter until mixture reaches consistency of fine crumbs. Stir in 1/2 cup cold water and the eggs. Using wooden spoon, stir until dough comes together; turn out onto work surface. Knead for 1 minute (if dough is very sticky, add flour, 1 tbsp at a time).
Divide dough in half. On floured work surface, roll out one half into 8-inch square. Press into bottom of prepared cake pan.
Over bowl, using your hands, squeeze reserved grated apples to extract most of the liquid (they should still remain slightly moist); spread grated apples in even layer over dough in pan.

Bake until cake is golden brown, 35 to 40 minutes. Let cool for at least 45 minutes; sprinkle with icing sugar. Using serrated knife, cut into squares. (Make-ahead: Can be stored in airtight container and refrigerated for up to 4 days.)
