Method

Spiced Streusel Topping

In bowl, combine flour, brown sugar, cinnamon, ginger and nutmeg. Using fingers, rub in butter until mixture reaches consistency of coarse crumbs. Set aside in refrigerator.

Apple Cake

Preheat oven to 350°F. Butter and line 9- x 5-inch loaf pan with parchment paper, leaving overhang on two opposite sides. Set aside.

In bowl, combine flour, baking powder, cinnamon, baking soda, nutmeg, ginger and salt. Set aside. In large bowl, using electric mixer on medium speed, beat butter and brown sugar until light and fluffy. Add eggs, one at a time, mixing well after each addition. Using wooden spoon, stir in yogurt and reserved flour mixture. Gently stir in apples. Scrape batter into reserved loaf pan. Sprinkle with reserved Spiced Streusel Topping.

Bake until cake tester inserted in centre of cake comes out clean, about 50 minutes. Transfer pan to wire rack and let cool for
10 minutes. Unmold cake directly onto wire rack and let cool completely. (Make-ahead: Can be stored in airtight container and refrigerated for up to 3 days or wrapped in plastic wrap and placed in resealable bag and frozen for up to 1 month.)
