Fun and festive Easter desserts
Easter Chicks
These ridiculously cute baby chicks use a simple, yellow-tinted, classic coconut macaroon batter as the base. All the decorations (the fun part!) are available at your local bulk food store. If you can’t find one of the candies in the recipe, use your imagination. Get creative and decorate them to your heart’s content.

Lemon Meringue Tarts
Lesson No. 1 in creating an adorable treat: Take a classic version of just about anything and make it mini! These tiny handheld versions of lemon meringue pie will surprise and delight even the most jaded dessert eater. When you’re using pasteurized egg whites to make meringue, be sure to shake the container vigorously before pouring out the contents, otherwise it may not whip up properly.

Speckled Easter Egg Chocolate Cake
This robin’s egg blue cake, covered in tiny “nests”, not only looks like the ultimate Easter dessert, but the moist milk chocolate cake layers and buttery icing simply can’t be beat. Thanks to the pretty colour and speckled decoration, your cake-icing skills don’t need to be perfect, so it’s a great way to learn how to make and ice a cake for the first time. Plus, whenever icing is involved, you’ll suddenly find many eager volunteers available to help (if only to lick the spoon!)

Polka Dot Lemon Sugar Cookies
If you love decorating cookies with royal icing at Christmas, you’ll really enjoy making these springtime-themed cookies. Find a selection of spring-themed cookie cutters at bulk food stores, kitchenware stores or even craft stores. Royal icing dries out quickly and you’ll want this to be a fun and relaxed project, so be sure to cover all your bowls of tinted icing with a damp paper towel when not in use.
