In bowl, flake tuna. Stir in mayonnaise, mustard and pepper; stir in celery and green onions. (Make-ahead: Cover and refrigerate for up to 24 hours.) Stir in tomatoes.Cut bread lengthwise in half. Lay, cut side up, on toaster oven tray. Spread tuna mixture over bread; top each with 2 strips cheese. Broil, watching closely, until cheese is bubbly, 1 to 2 minutes.
