Raw beets - great summer salad crunch!
Beets - those deep purple, round root vegetables full of
folate, vitamin C, potassium and fibre - not only
roast up super sweet for a fall treat, they are also wonderful
eaten raw! Raw beets add a delightful crunch to any salad, like this
Tangy Matchstick Salad.
To prepare raw beets, simply
peel and either cut into
julienne pieces or grate using a box grater.
And if you've never had
fresh beet juice, you should definitely try it!
Tip: Wear plastic gloves when handling beets to avoid pink fingers (although the pink eventually washes off)!
