Mini Heirloom Tomato Salad
When I was a kid, no one ever told me that "real" Greek salad never used iceberg lettuce. As a child raised on the classic combo of iceberg lettuce, cucumber and tomato, it's fair to say that my young mind was completely blown. Up to this point, I had no idea how much I would come to love this simple yet delicious salad. This mini heirloom tomato salad isn't authentically Greek, but I've borrowed the essence of this cuisine to give a little twist to an otherwise everyday salad.
Here's what you need to do to make this salad: In a bowl or serving dish, layer with sliced
bell pepper, thinly sliced
sweet onion and halved
mini heirloom tomatoes (chopped tomatoes make a great substitute). Drizzle with equal amounts of
lemon juice and
extra-virgin olive oil. Sprinkle with a bit of
salt,
pepper and
oregano. Top with crumbled
feta cheese.
