How to measure flour correctly

We've talked about how to measure properly a couple of times in the past, but it's nearly never more important than with flour. Unfortunately, it's easy to get lazy and find yourself dunking the measuring cup into your flour bin. We always use the spoon-and-sweep method, which means spooning or scooping the flour into your measuring cup and then levelling it off with a flat edge (rather than dunking, which can compress the flour, and shaking to level off, which shakes it down even further). how-to-measure-flour Our greatest tip for remembering to measure the right way? Keep a scoop (or a large spoon) and a flat edged butter knife right in your flour bin. That way, the tools are there and all you need to do is use them.
