Easy Make Ahead: Our Ultimate Banana Bread

The Ultimate Chocolate Chip Banana Bread
Photography by Jeff Coulson[/caption] March break is just around the corner and our Ultimate Banana Bread is something that little hands can help with in the kitchen. I love to make two batches of this recipe (especially the variation with chocolate chips!), whenever I get the chance because I have one to keep and one to give away. There's only two of us in my house, so try as we might, it takes a while to get through an entire loaf, so I'll freeze some for later. If you'd like to stash some away for later, make sure it has cooled completely before you throw it in the freezer. I love to freeze individual slices, so I can grab one during the week as a quick snack. For best results, thaw, while still fully wrapped, at room temperature. For a whole loaf, double wrap in plastic before throwing it in the freezer for up to 1 month. For individual slices, double wrap each slice and store in a re-sealable freezer bag before throwing it in the freezer for up to 1 month. Tip: If you're going to make more than one batch of banana bread, assemble each batch separately rather than just doubling the recipe. It takes a bit more time, but not all baking recipes behave the same way when ingredients are doubled, so it's better to be safe than sorry.
