Cookie of the Day: Fruitcake Shortbread
There are definitely two camps when it comes to fruitcake
–
the lovers and the haters. I admit, I'm not a huge fan, myself. But I've found one way in which I really enjoy a gentle nod to the flavours of fruitcake, without being overwhelmed by the dense texture of the cake itself.
Fruitcake Shortbread! Yep. Adding the word "shortbread" to the end of just about anything is a great way to get me to like it.
Tip: I find the secret to taking this treat from good to great is being sure to buy a fresh package of mixed glazed fruits, rather than using the stuff that's been hanging around in your cupboard since last year. Having lots of syrupy juiciness makes the fruit easier to cut and adds a lovely chewy texture to these buttery rum-glazed cookies. Tell me: Are you a fruitcake lover or hater?
