Best leftover turkey sandwich ever!
If you are
hosting a holiday dinner, you will most likely end up with leftovers. Personally, I think if you are going to all the trouble to make a huge meal, there better be leftovers so you
don't have to cook again for awhile! Leftovers are something even the
Test Kitchen has to deal with! When
Food Specialist Irene Fong was developing the
Roast Turkey with Herbed Aioli for the December issue, we of course had lots of leftovers. Looking for something for lunch, I turned the
leftovers into a scrumptious sandwich. So take all that
leftover roast turkey from your holiday meal and
turn this,
Plus this,
Into this! With the addition of a few strips of bacon, lettuce,
cranberry sauce and a baguette, we had an amazing sandwich, perfect for a Boxing Day lunch!
To
assemble this sandwich, start by cutting the baguette in half horizontally.
Toast under a broiler if you want
(I wanted - I love crispy baguette).
Spread bottom with cranberry sauce, layer on lettuce, cold sliced leftover turkey and a few strips of crispy bacon.
Slather on some (OK, alot!) of the herbed aioli on the top of the baguette, and enjoy! It was sooooo good - probably the
best turkey sandwich I've ever had! Don't have leftover turkey? The sandwich is just as good with
