Behind the scenes in the Test Kitchen: No-knead bread bonanza!
Yes, no-knead bread is amazing. But our Tested-Till Perfect no-knead breads are the best. Here's why. Unlike some, who seem to have just copied
NYC baker Jim Lahey's no-knead dough and Dutch oven method, we in the
Canadian Living Test Kitchen developed -- from scratch! -- our own three signature doughs (
one white,
one whole wheat and
one gluten-free). These easy doughs truly make some of the best sandwich bread I've ever tasted. We featured them in our January 2014 issue with all sorts of variations so you can customize them to your heart's content. We tried cinnamon raisin; rosemary and garlic; cheese and herb; and sundried tomato and olive as our variations for all three doughs, but you could truly try any number of add-ins. And just to show you how much work went into this feature, here are just a handful of photos from our testing process.
