5-minute avocado dressing
Sure, a few slices of avocado are always a nice treat to add to a salad or a sandwich, but if you're a real avocado aficionado, that may just not be enough! If it isn't, you may want to give this avocado dressing a try. This
super creamy dressing is not only delicious to add to salads of almost any kind, but it also makes a perfect spread for sandwiches or
tacos as well as a tasty dip for fresh veggies.
You can
adjust the amount of water to make the dressing more or less thick -- you may want it thicker if you're using it as a spread and a little thinner if you're using it to dress a salad.
Avocado DressingMakes about 1 1/2 cups 1 ripe avocado,
pitted and
peeled 1/4 cup extra virgin olive oil 1/4 cup fresh cilantro 1 clove garlic, peeled and halved 2 tbsp lemon juice 1/4 cup water 2 tsp red wine vinegar Generous pinch each salt and pepper In food processor, combine avocado, extra virgin olive oil, cilantro, garlic, lemon juice, water, red wine vinegar, salt and pepper.
