Trailmix Oat Squares

The perfect size to serve with tea or for dessert after a big meal, these squares are just what you need when you’re craving a sweet bite.

Method

Preheat oven to 350°F. Line 9- x 12-inch rimmed baking sheet with parchment paper.

 In bowl, whisk together flour, oats, flaxseeds, baking soda, cardamom and salt; set aside.

In separate large bowl, using electric mixer on medium-high speed, beat butter until creamy. Beat in ginger, brown and granulated sugars; beat in egg and vanilla for 2 minutes. Reduce speed to low; beat in reserved flour mixture just until combined (do not overmix). Using spatula, fold in sunflower seeds, pepitas and raisins. Spread dough in ½-inch thick layer on prepared baking sheet.

Bake until edges of dough are golden brown and cake tester inserted in centre comes out clean, 15 to 20 minutes. Let cool for about 15 minutes before cutting into 12 squares. Let cool completely, at least 15 minutes. (Make-ahead: Can be stored in airtight container at room temperature for up to 3 days or frozen for up to 3 months.)
