In skillet, melt butter over medium heat. Add mushrooms and ham; cook, stirring occasionally, for 5 minutes. Stir in white wine; cook until liquid has reduced by about half, 3 to 4 minutes.
Add broth, mustard, thyme, rosemary and cream; bring to boil. Reduce heat; cook until liquid has reduced by about half and cream has thickened, 5 to 7 minutes. Season with salt and pepper.
Place brioche slices on serving plate; top with mushroom-ham mixture. Sprinkle with chopped chives and thyme.
