Line 8- x 4-inch loaf pan with plastic wrap. In small skillet, cook ham over medium heat for 2 minutes. Stir in cheese, cream and parsley. Cook until cheese begins to melt; remove skillet from heat. Spread mixture in even 3/4-inch thick layer in prepared loaf pan. Freeze until mixture is firm, about 30 minutes.
In small bowl, beat eggs. Place flour in second bowl and panko in third bowl. Remove cheese mixture from pan and cut into 3/4-inch cubes. Dredge in flour, then in eggs, shaking gently to remove excess. Toss in panko, pressing to adhere.
In deep fryer or skillet, heat oil to 350°F. Add cheese cubes, a few at a time, and cook until golden, about 2 minutes. Drain on paper towel-lined plate. Serve hot. (Make-ahead: Cooled cubes can be stored in air-tight container and frozen for up to 1 month.)
