Preheat oven to 400°F. Place ten 1-cup ovenproof ramekins on baking sheet.
Cook pasta for 2 minutes less than package directions; drain.
Meanwhile, in large saucepan, melt butter over medium heat; cook garlic and thyme, stirring, until fragrant, 1 minute. Stir in flour; cook, stirring constantly, for 2 minutes. Pour in milk in slow steady stream, whisking constantly until smooth; cook, stirring constantly, until slightly thickened, 5 to 7 minutes. Stir in salt, pepper and nutmeg. Remove from heat; stir in cheddar, Gruyère and Parmesan until smooth. Discard thyme; stir in pasta and lobster. Divide mixture among ramekins.
Topping: In bowl, combine bread crumbs with Parmesan; using fingers, rub in butter until mixture resembles coarse sand. Sprinkle cheddar over pasta; top with bread crumb mixture.
Bake until sauce is bubbly and topping is golden, about 20 minutes. Broil until browned, 1 to 2 minutes. Let stand for 10 minutes before serving.
