Grilled Cheesy Sweet Potato Stacks

Preheat barbecue to medium-high heat (about 375°F); place sheet of nonstick barbecue foil on one side of grill and raise edges of foil slightly. Cut a few wooden skewers in half and soak in water for 5 to 10 minutes.

Meanwhile, in large bowl, combine butter, Gruyère, Parmesan and thyme. Add sweet potatoes; toss to coat. On cutting board, stack sweet potato slices to form 4 to 6 small stacks. Brush remaining butter-cheese mixture on top of each stack. Season with salt and pepper. Insert a wooden skewer through centre of each stack to secure.

Carefully place sweet potato stacks on foil on grill. Close lid and cook until sweet potatoes are very tender, 30 to 35 minutes. Transfer to serving plate and sprinkle with chopped fresh thyme, if desired. Remove skewers before serving.
