Preheat barbecue to medium heat (about 350°F); grease grill.
In bowl, combine mayonnaise, sour cream, lime juice, cilantro, chipotle powder and hot sauce; set aside. In small baking tray, place crumbled corn chips; set aside.
Spray corncobs with cooking spray; place on grill. Cook, turning a few times during grilling time, until corn is tender and slightly charred, 10 to 15 minutes. Transfer to plate.
While corncobs are hot, brush with reserved mayonnaise mixture. Roll each corncob in reserved corn chip crumble, pressing to adhere. Sprinkle with sea salt and serve with lime wedges.
