Method

Creamy Dill Dip In bowl, whisk together sour cream, mayonnaise, pickle and dill. Season with salt and pepper. Set aside in refrigerator.

Corn Fritters Preheat oven to 350°F; line baking sheet with parchment paper. Set aside.

In bowl, stir together flour, baking powder, cumin, garlic powder and hot pepper flakes. Whisk in eggs, buttermilk and milk until smooth. Stir in corn until combined; season with salt and pepper.

In heavy-bottomed saucepan, add enough oil to reach 1 inch up side. Heat over medium heat until oil reaches a temperature of 350°F.

Using 2 spoons, form 2 tbsp balls of corn mixture and place in oil, 3 or 4 at a time. Cook until golden brown, about 2 minutes. Transfer to baking sheet and sprinkle with salt; keep warm. Serve with Creamy Dill Dip.
