Method
Coconut Shrimp Croquettes Preheat air fryer to 375°F. In large bowl, combine shrimp, 1/2 cup of the bread crumbs, 1 of the eggs, mustard, mayonnaise, sriracha, green onions and lemon zest and juice. Season with salt and pepper. Form mixture into twelve 2 tbsp balls; set aside.
Place flour in wide shallow bowl. In second wide shallow bowl, lightly beat remaining eggs. In third wide shallow bowl, combine remaining bread crumbs and coconut flakes.
Dredge each croquette in flour, then in egg, then in bread crumb mixture to coat well. Reserve on plate.
Lightly spray air fryer basket and croquettes with cooking spray. Place croquettes in single layer in air fryer basket. (If all 12 don’t fit, cook in batches of six.) Cook, turning halfway through cooking time, until breadcrumbs are crispy and golden brown, 10 to 12 minutes. (Repeat with remaining croquettes, if necessary.)
Creamy Cilantro Dip In food processor, pulse together cilantro, tarragon, mayonnaise, Greek yogurt and garlic powder until smooth and pale green. Season with salt and pepper. Serve with Coconut Shrimp Croquettes.
