The Foodie-file: Easter Brunch

easter brunchThis is Easter Brunch Italian style at my family home. It involves lots of cheese, eggs and bread and more cheese eggs and bread! I think it is my favourite holiday food of all. This year we were missing a double crusted pizza that is filled with (you guessed it) eggs, fresh cheese and dried sausage or it is also sometimes filled with a swiss chard and anchovy filling. Everything on the table is home made except for the Easter bread that was purchased which was actually a Polish Paska, but even that tasted quite good - like some nice Polish grandma made it. Brunch starts with this soup. The dried croutons are dipped in eggs and sprinkled with parmesan cheese and layered in a bowl, then boiling hot chicken broth is poured over the whole thing to cook the eggs. soup These are savoury tarts. the filling is ricotta cheese and fresh herbs. The bread sticks are long johns, fried savoury bread sticks that are de-riguer on any holiday table in our house. cheese tarts Here is my spectacular ricotta cheesecake - I had to cut it so my Dad could sneak a piece before breakfast without my Mother knowing! cheesecake This is a frittata filled with bacon, dried sausage, green onions and parmesan cheese. The easter bread is in the background. frittata My sister Nancy made these ricotta cookies. The kids loved them. They are like little cakes and looked sunny and happy on the breakfast table. ricotta cookies These taralli always get taken out later in the day when we are playing cards and drinking beer.
