What is cookie butter and why is it so irresistible

What if you could enjoy cookies by the spoonful? Or spread them on toast? We’re not talking cookie dough, but cookie butter. cookie-butter Photo courtesy FlickrCC/Angie Stalker The smooth, peanut butter-like spread is getting big hype as the latest tasty indulgence. Originally a European treat, the spread is made from Speculaas cookies, a delicious cookie spiced with cinnamon, ginger, cardamom, cloves and nutmeg. According to Test Kitchen food specialist, Leah Kuhne, cookie butter tastes like caramelized Speculaas cookies, which are common in Holland, Germany and Austria. If you have a penchant for eating peanut butter or Nutella right out of the jar, cookie butter may be your next vice. While traditionally made of Speculaas, who’s to say it couldn’t be made with your favourite cookie. I can see myself enjoying maple cookie butter or even KitKat butter.
