My inspiration for this lasagne came after visiting a local farmers market in August, when all the produce was fresh, in season, and unbelievably delicious! When the sauce is made using fresh tomatoes, there is no better way to showcase fresh Ontario produce. This dish makes a LOT, so is perfect for serving when company is over, or for lots of leftovers!
