The Foodie-file: Very Fine Dining at Bluewater

HalibutBlue Water Cafe and Raw Bar were kind enough to host me for dinner while I was in Vancouver. They had a set menu arranged for me that was divine - all the best that the ocean had to offer. I photographed the whole dinner to post here because it was as visually beautiful as it was delicious. Wine Director and Manager Andrea Vescovi was a fantastic host and paired each course with a complimentary wine for us. I had dinner with the restaurant representative Shelley McArthur who regaled me with tails of the mountains of chanterelle mushrooms that grow all her families property on one of the islands - I was green with envy!
Here’s what we ate, there was also a Dungeness Crab Salad that was served after the oysters but gluttony over took me and I ate it before I could click a pic!

We started with raw oysters, there was an east coast and west coast variety. Unfortunately I don’t remember what varieties they were but both were delicious - the west coast was a bit cucumber-y flavoured.

After the crab salad; they served this Halibut Tiradito that is a marinated fish dish that is a bit like a ceviche with salsa verde, sweet and hot peppers, corn and onions. On the side were fried chick peas. Andrea paired it with Pascal Jolivet Attitude Sauvignon Blanc 06 from the Loire Valley that was fantastic.

Then we had Trap Caught Wild Prawns with snap peas, carrots, fresh herbs in a ginger, chili and lemongrass broth paired with Sokol Blossom Evolution 11th Edition from Oregon

My favourite course was this sablefish glazed with soy and sake, green beans and a tamarind-orange reduction. Andrea served the Cedar Creek Platinum 05 Pinot Noir that was also my favourite wine of the night - fantastic!

And finally the pastry chef whipped up thi dish called Chocolate & Mint. It was a molten St Domingue chocolate cake, a frozen mint parfait, and griottine cherries and vanilla cream with a chocolate garnish. Andrea chose a Paradise Ranch Chardonnay Ice Wine from the Okanagan to serve alongside.

After dessert we were treated to a selection of tiny mini pastries, all delicious I’m sure but I was about to bust so I declined. I also crashed a party the next night at Blue Water and had fantastic raw fish off the raw bar. Next time I’m there a want one of their seafood towers!

    Christine, the food looks luscious! Question - what were the chick peas fried in? I love chick peas but tire of them straight from the can.
