The Foodie-file: Danish Shortbread
I was at a tree trimming party on Saturday afternoon and my friend Debbie brought a butter pastry that was divine. We all voted it best treat on the Christmas cookie platter. She said she got the recipe from someone at her work that always brings it to group meetings.
I don’t have the recipe but I have been hunting around and I think it is a Danish recipe for shortbread called Sankager, or maybe it is Norwegian, both seem to make something similar. It is baked in a 9†pan and had almonds sprinkled over the top. It tasted very buttery with a hint of almond.
I am going to try and replicate this treat. Here is the recipe I am going to use, I know these are all of the ingredients but I don’t know if the proportions are right.
Danish Shortbread
1c butter
1c sugar
1 1/2 tsp almond extract
1 egg
2c flour
½ tsp baking powder
¼ cup sliced almonds
Cream the butter and sugar together. Add the egg and almond extract. Stir the flour and baking powder together. Add the flour to the butter mix. Press into a 9†parchment lined cake pan. Sprinkle the almonds on top. Bake at 325 degrees for…. Well I actually don’t know how long, till it is done - I’ll have to get back to you about this.
